Valentines Day 2012

First and foremost I want to thank all of the first time diners and the returning diners that came to The Lodge for this Valentines Day. Here are a few pictures for the people who missed out and I will be posting recipes shortly.

House cured pork belly with a white bean stew, fried purple kale, and pickled fennel.

Roma tomato "tart tatin" on a pine nut and rosemary crust with shaved manchego and a lime creme.

Treviso salad with grilled pears, fig balsamic, smokey blue cheese, and brown butter vinaigrette.

Pheasant duo; Confit thigh with pan seared yukon potatoes, and carrot demi; Roasted pheasant breast with buttered baby carrots, and rutabaga

Chocolate Pot de Creme, candied orange, and vanilla cream.

Valentines Day

We have a very special menu planned for Valentine’s Day so don’t forget to make your reservations at The Lodge restaurant early.  Here is the Prix Fixe Menu and the only menu that we will be offering this Valentine’s Day.  We hope to see you at Black Butte Ranch!

Valentines Day Prix Fixe

1st

Treviso and Grilled Pear Salad

Brown butter vinaigrette, fig balsamic, and smoked blue cheese.

House Cured Pork Belly

Stewed white beans, crispy kale, and pickled fennel.

 

2nd

Tomato Tarte Tatin

Herbed roma tomatoes in a pine nut and rosemary tart with lime crème and shaved manchego.

Caramelized Sea Scallops

NW mushroom and faro risotto roasted apples, butternut squash, and fried Brussels leaves.

3rd

Truffle Basted Filet Mignon

Tomato ragout, rosemary and garlic mash, and house black truffle salt.

Pheasant Duo

Confit of pheasant leg, roasted breast, carrot demi-glace, pan seared potatoes, and baby root vegetables.

Grilled Oregon Steelhead

Stoneground mustard gnocchi, baby yellow beets, brown sugar glazed bacon, and a preserved lemon butter sauce.

Butternut Squash Angliotti

Sage brown butter, roasted mushrooms, mustard greens, espresso espuma.

Candied orange and vanilla cream
