Pan Seared Cobia with Citrus and Matsutake Mushrooms

Pan seared cobia, finger limes, matsutake mushroom salad with brown butter vinaigrette, fried rice with a local farm egg, and passion fruit vinegar.

I used a white soy marinade on the mushrooms after I gave them a little color in a frying pan, which helped compliment the radish like flavor and the meatiness of them.
