Tenderloin Carpaccio

Beef tenderloin carpaccio with treviso, banyuls vinaigrette, Grana Padano, sea salt, and house smoked cherry tomatoes.

Carpaccio is classic Italian and one of my most favorite appetizers.  The key is good beef and a good vinaigrette.  The dressing does the ceviche style “cooking”, the Grana Padano adds a nice finishing flavor, the treviso gives you a hint of bitter, and the smoked tomatoes ties it all together.
