House Cured Salmon Carpaccio

House cured salmonblack garlic caviar, truffle sea salt, and an apple wood smoked mache salad

Yes, there is smoke under the glass from apple wood chips; it very lightly coats the lettuce so it isn’t overpowered by smoke.  Due to my poor photography skills, you can’t see the olive oil powder that went really well with this dish.
