Nori and Pumpkin Seed Rub

This rub goes great with a lot of different proteins, the most recent that I used it on were scallops.

Pumpkin Seed and Nori Rub

1/4C    Black Pepper

8ea      Nori Sheets

2T        Dried chili flakes

2T        Pimenton d’Espellete

1/4C    White sesame seeds

1/4C    Pumpkin Seeds

Toast nori in a 300° F oven, takes about 3-5 minutes, no fan!  If you use a fan you will open the door and get a burst of shredded nori paper in your face.  Cool nori and crush with your hands.

Combine all ingredients into a food processor and pulse until it resembles of sand.

Since there is no salt in this rub, make sure to season your protein first.
